Lemon Pickle Recipe || Instant Lemon Pickle
Lemon Pickle is one of the famous pickle in India. This is a quick lemon pickle. I did not use oil in this. That's why you can call it healthy. Lemon is very sour, hence to balance it sugar or jaggery is added to it. I have prepared it by adding jaggery to it, so you can make it within 1 hour. It does not spoil for a whole year. You can eat it with rice or roti or just as it is. The taste of this pickle is spicy, sweet and sour. So let's see the method of making it.
Nimbu ka achar recipe
PREPARATIONS METHOD
- Take 1 kg of clean lemon
- Wash it 2 or 3 times in freshwater
- Boil water in a deep vessel or kadhai
- Once the water is boiled, turn off the gas flame
- Put cleaned lemon in boiled water. Keep 5 minutes in boiled water
- After 5 minutes, drain it excess water and wipe it with a cotton cloth
- Dry roast fennel seeds, cumin seeds, mustard seeds and black pepper
- After cooling add this spice into a grinder jar, in this add red chilli powder, normal salt and black salt
- Grind coarsely
- Now cut lemon into 4 or 2 pieces or as per your choice
- Remove seeds from lemon
- Heat a steel kadhai or any vessel
- Add jaggery and ½ cup of water
- Boil for 2 minutes; after the jaggery melts, add the prepared powder. Mix everything well
- Now add chopped lemon and stir well
- Cook lemon for 5 minutes in jaggery syrup
- After slightly cooked add ajwain and mix well
- Your Lemon pickle is ready to eat.
- Cool till room temperature then store it in a clean glass or ceramic jar
- You can put this pickle in sunlight for 3 to 5 days for better absorption of spices

- Normal Salt - 2 teasp

- In this pickle making process, don't use copper, brass, aluminum, non stick or iron vessels
- You can use only steel or hard anodized vessel for this
- Don't boil lemon, only soak for 5 minutes in boiled water. Otherwise it will bitter in taste
