INGREDIENTS NEEDED FOR THIS RECIPE:
- Sweetcorn (fresh or canned)
- Cooked rice (preferably day-old)
- Paneer - 200g
- Green chilli - 2 Chopped
- Cumin seeds - 1 teasp
- Onion Chopped - 1 (finely)
- Ghee/Oil - 2 tbsp
- Red Chilli Powder - 1 teasp
- Turmeric Powder - ½ teasp
- Garam Masala - 1 teasp
- Salt - 1 teasp
- Optional protein (chicken, tofu, shrimp, paneer etc..)
PREPARATION METHOD

- Start by cooking your rice. Day-old rice works best, but fresh rice will do as well. Just make sure it’s cooled down before frying!
- Next, grab a pan and heat some ghee/oil over medium heat.
- Put chopped green chilies, cumin and finely chopped onion
- Saute for few seconds. Fry till onion golden brown
- Then add paneer cubes, Saute for few seconds
- Now, let’s throw in sweetcorn! Sauté it for a couple of minutes until it’s tender and sweet.
- Now add dry spices like redchilli powder, turmeric powder, garam masala and salt
- Time to add the rice! Gently break up any clumps and mix everything well.
- Lastly add 1 teasp of ghee and mix everything well
- Finish with a sprinkle of green onions for freshness. Give it one last toss, and your sweetcorn fried rice is ready to serve!
