Medu vada recipe || How to make crispy medu vada
Medu Vada is a South Indian snack/ breakfast made from black gram dal. It is usually made in a donut shape, with a crisp exterior and soft interior. It is a popular food item in South Indian cuisine, usually eaten as a snack or breakfast.
URAD DAL
Urad dal is used in various dishes in India. It is mostly used in South Indian dishes like Idli, Vada, Dosa, Uttapam etc. Urad dal curry recipe is cooked in North India. It is used in both forms without peel and with peel. In South Indian cuisine it is used without the skin and urad dal curry is prepared with the skin.
It is used for various medicinal purposes in Ayurvedic medicine. It is a rich source of nutrition and helps boost energy. Urad dal is rich in fiber which helps in improving digestion. It may also help manage constipation by promoting bowel movements due to its laxative properties
Medu Vada Recipe
PREPARATION METHOD
- Wash black gram (urad dal) lentils 2 three times and drain it excess water
- Add fresh water
- Soak for ½ an hour to 1 hour
- After 1 hour drain it excess water
- Blending tips :-
- Take a chutney jar, put soaked udad dal
- First time grind without water in pulse mode
- Then open lid and add 1 tbsp of water
- Grind again for few seconds in pulse mode
- Repeat same process three to 4 or 5 times
- Add only 3 to 4 tbsp of water
- Don't add more then 4 tbsp of water
- Make sure the grinder jar does not get hot, otherwise the blade will break or the jar may get damaged
- So always grind in small batches
- Now add all spices, Mix everything well
FRYING MEDU VADA
- Take water in a big bowl
- Wet whole palm in water
- Take a ball sized batter
- Prepare round shape in palm, Make a whole in center
- Put directly in hot oil
- Heat oil in deep pan
- Once oil is hot, reduce gas flame into medium
- Put one by one vada in oil
- Before making vada, wet your palm in water every time
- Once vada crispy one side, flip otherside
- Flip 2 to 3 times till crispy
- Fry vadas in medium flame
- Lastly take out vada in a plate
- Serve with hot sambar

INGREDIENTS
- Urad dal - ¾ Cup
- Salt - 1 teasp
- Onion chopped - 1
- Coriander leaves - ½ cup
- Curry Leaves - 15 to 20
- Green chilli Chopped - 3
- Ginger - 1 tbsp
- Oil - 500 ml / ½ Litre

- NOTE :-
- If you use whole urad dal then soak it for 1 hour
- If you use split urad dal then soak it for ½ an hour
- Grinding tips is most important
- You can use ice-cubes while grinding
- Read carefully and follow the given suggestions
- Don't fry in too much hot oil
- Fry all vadas in medium hot oil only
- If you fry in too much hot oil, it's outer part fry quickly and inner parts not cooked properly
- Fry in sufficient quantity of oil
- Serve vada with hot Sambhar
