Dahi bhindi recipe || Masala bhindi with curd
Dahi Bhindi is a side dish recipe. Bhindi means (lady's finger) and dahi means curd. In India, Bhindi is made in different ways like masala bhindi, bhindi fry, bharwa bhindi. Dahi Bhindi is also made in different ways but today I am making dahi bhindi in odia style.You can serve this delicious bhindi as a side dish with plain rice.

ABOUT LADYFINGERS (BHINDI)
Ladyfingers is known as bhindi in the Indian Hindi language. Bhindi is long, thin and green. When it is cut, there is a sticky substance inside it.
Ladyfingers is an easily available vegetable in the Indian market. This vegetable is very much liked in India. This vegetable is prepared in different ways. It is cooked by cutting it into different sizes. The ingredients are used also changed in various bhindi recipes.
CURD (DAHI) MAKING PROCESS
Dahi means curd. You can also prepare it at home
Curd is made from milk. After boiling the milk slightly cool it, pour this warm milk into a vessel. Add 2 tbsp pre-prepared curd to it. Close the lid and leave it for 5 to 8 hours in a warm or hot place. After 8 hours curd is set. Keep this prepared curd in the refrigerator before use. It is a little sour to eat.
Dahi Bhindi: The combination of Indian spices, curd and bhindi is very tasty. Curd and ladyfingers are also more beneficial from the health point of view.

- Heat up a frying pan and add two spoons of oil to it.
- Once the oil is warmed up, toss in some cumin, mustard seeds, and curry leaves. Let it sizzle for a few seconds.
- Now, add the chopped ladyfingers and give it a good stir for about a minute
- Sprinkle in a spoonful of salt and cover it with a lid. Let it cook for a minute.
- Next, add some chopped green chilies and onions. Mix everything together, cover it, and let it cook for 2 more minutes.
- Once the ladyfingers and onions are nicely cooked, add some red chili powder, turmeric powder, and roasted cumin powder.
- Turn off the heat before adding the dry spices and make sure to mix everything well.
- In a separate bowl, mix half a cup of curd, half a cup of water, and half a spoon of black salt.
- Add the roasted ladyfingers to the bowl and mix everything together.
- Now, your delicious dahi bhindi is ready to be served with rice! Enjoy your meal!

PREPARATION METHOD
- First of all, wash the bhindi in water two to three times
- After cleaning it well, take it out of the water and let it dry for 1 minute
- If the lady's finger is long then cut it into three pieces and if it short then cut it into two pieces
- Heat a frying pan, add two spoons of oil to it
- After the oil gets a little hot, add cumin, mustard seeds and curry leaves to it
- Saute it a for few seconds
- Add chopped ladyfingers and stir for one minute
- Add one teaspoon of salt and cover with the lid
- Let it cook for 1 minute
- Now add chopped green chillies and onion
- Mix everything well, cover the lid and cook again for 2 minutes
- After the ladyfingers and onion are cooked well, add red chilli powder, turmeric powder and roasted cumin powder
- Turn off the gas flame before adding the dry spices
- Mix the roasted ladyfingers well with the spices
