Pani puri recipe || Golgappa recipe
Pani Puri or Golgappa is a very popular street food in India. Most of the people like to eat it. Its taste is sour, sweet and pungent.
Small puris are made to make gol gappas. Mashed potatoes and peas are put inside the poori. This aloo matar puri is eaten by dipping in the golgappas water.
Its more tastier when eaten with water, it is also eaten dry. So without delay let's see how to make it....
PREPARATION METHOD
- First of all we will prepare the golgappa water.
- To make Golgappa water,
- In a vessel , firstly add four table spoons of tamarind chutney, one spoon of red chili powder, one spoon roasted cumin powder,one tbsp of chat masala, half spoon black pepper powder, half spoon salt, half spoon black salt and pinch of hing (Asafoetida)
- Add 500 ml water and mix well. . ,
- After mixing all these, add some salty boondi
- now there is golgappa water is ready
- TO MAKE POTATO MASALA
- Soak white peas for 6 to hour in water
- boil 2 potato and soaked white peas in pressure cooker for two whistles
- Peel the potato and mix it roughly with the peas
- Now add some red chili powder, chopped onion, green coriander leaves, curry masala ,turmeric powder and salt.
- Mix everything well
- Now your aloo masala is ready.
- TO MAKE POORI
- Take 1 cup of all purpose flour, 3 spoon of semolina, one spoon of oil, half spoon of salt
- Mix all well
- Now add water gradually , Knead hard dough.
- Now take a orange sized dough and prepare like roti, chapati with the help of rolling board and rolling pin
- Cut into small puri with the help of cookie cutter
- Heat oil in a deep kadhai
- Put one by one puri in it
- Fry till it becomes crispy and puffy on both sides
- Now Golgappa puri is ready.
- SERVING
- While serving , Take a puri and make a hole on above with the help of your thumb
- Put a teaspoon of aloo masala
- Now dip this puri in golgappa water.
- Serve quickly
- Do not keep the golgappas submerged in water for a long time, it has to be eaten immediately.

- All purpose flour (maida) - 1 Cup
- Suji rava - 3 tbsp
- Salt - ½ teasp
- Hot Oil - 1 tbsp
- Warm Water - ½ cup
- Ingredients for mashed potato
- Boiled potatoes - 2
- White peas soaked & boiled - 1Cup
- Red Chilli Powder - 1 teasp
- Turmeric Powder - 1 teasp
- Curry masala - 1 teasp
- Coriander leaves
- Onion Chopped - 1 medium
- Salt as per taste
- Ingredients for Golgappa Water
- Tamarind Chutney - 4 tbsp
- (You can use tamarind water 1 Cup & jaggery 2 tbsp instead of chutney)
- Red Chilli Powder - 1 tbsp
- Roasted Cumin Powder - 1 teasp
- Chat masala - 1 tbsp
- Black pepper powder - ½ teasp
- Black salt - 1 teasp
- Salt - ½ teasp
- Pinch of hing (Asafoetida)
- Water - 500 ml
- Salty bundi - 2 tbsp
