Cowpeas are as tasty as rich in protein and full of fiber, it is also very easy to make. First of all, the cowpea has to be soaked in water for 3 to 4 hours, after this, put a little salt, oil and turmeric in a cooker and cook it till two whistles, then add some freshly chopped vegetables and lemon juice. Protein rich breakfast is ready to serve
This recipe is so much delicious and easy to cook. You can make this recipe for breakfast or in the evening snacks. I have used less oil in it and it is very healthy. Once you definitely try it.

We can eat raw vegetables like tomato, cucumber, onion and green chili, So I used all these vegetables
You can add more veg like carrot, beetroot etc..
SPICES
Indian spices like turmeric powder, red chili powder, curry masala and lemon juice are used for more flavorful and enhance its taste
OIL :- Oil used for little bit of fat in salad
Pomegranate seeds are optional
BENIFITS OF COWPEAS
Vitamins A and C and polyphenols in cowpea have antioxidant properties, which reduce inflammation and the risk of chronic diseases like heart disease, diabetes and some cancers. They also encourage collagen synthesis, which improves skin repair, reduces age-related symptoms and enhances radiance.

PREPARATION METHOD
- First of all, wash the cowpeas properly in fresh water and after that soak it for 4 to 5 hours in water
- After 4 to 5 hours, strain cowpeas from water and put them in the cooker
- Now, add turmeric, red chili powder, curry masala, salt, oil and 2 cup of water
- Cook till two whistles
- After 1 to 2 minutes, put the boiled cowpea seeds in a big vessel,add all the chopped vegetables and the rest of the ingredients
- Mix well everything
- Your protein rich and less oil healthy breakfast is ready to serve
