How to Prepare Pickle Masala at Home.There are so many types of pickles in India .It is taken as side dish with rice, chapati and paratha . Pickle masala is one of the main ingredient added to pickle.
You can easily prepare large quantities of achar(pickle) masala at home and use it when making pickle .It can also be added to pickled vegetables or achari sabji .
To make pickle masala many spices are roasted separately and cooled till room temperature and grinded in a grinder jar .After that it is stuffed in any airtight container and kept .

Preparation Method (Step)
- Roast whole masala and powder masala separately
- Cool till room temperature , grind coarsely

INGREDIENTS
- Coriander seeds 100g
- Cumin seeds 50g
- Mustard seeds 50g
- Fenugreek seeds 1 tbsp
- Fennel seeds 3tbsp
- Turmeric powder 2 tbsp
- Kashmiri Red chilli powder 3 tbsp
- Red chilli (whole) 20g
- Salt 2 tbsp
- Asafoetida 1 teasp
Prep_Method
- Dry roast whole ingredients for 5 mins in a pan
- Take it out from kadhai
- Dry roast red chilli for 1 min
- Take it out from kadhai
- Dry roast Powder masala for 1 min
- Take it out from kadhai and keep separate from whole masala
- Lastly roast salt for 1 min
- Take it out from kadhai and keep it with powder masala
- Cool all ingredients for 1 hour
- Grind coarsely whole masala in a grinder jar
- Then add powder masala in same jar and grind again for 1 mins
- Now ready to use pickle masala
- Store it in airtight container
Note :- Don't over roast all ingredients
